Schatzie, therefore, selects the finest American Wagyu Beef available in America which is nearly indistinguishable from its cousin in Japan. Because of American Wagyu Beef’s unusually dense fat marbling, Wagyu Beef surpasses USDA marbling standards for PRIME-grade beef.
