Who is Schatzie the Butcher?
Schatzie comes from a long line of butchers going back to his great, great grandfather in Speyer, Germany who was born in the early 1800s. Schatzie started in the meat business when he was 10 and has been a butcher for the last 60 years. Thirty of those years were spent on Madison Avenue where Schatzie had his own very successful butcher shop known to all well-heeled Upper East Siders for his top quality USDA Prime Meat and Free-Range Poultry. Schatzie has been at his current Upper West Side location since 2010 and when he relocated, his oldest son Richie joined Schatzie full-time. Schatzie is one of the very few remaining true butchers and is known by all as Schatzie the Butcher – the Meat Man of Manhattan.

Are the products sold online the same as those in your store?
Yes, you will get the same fine, fresh meat and poultry online as those sold in our store.

When can I place my order?
You can place your online order 24 hours a day on our Website.

How do I coordinate and confirm my delivery time with Schatzie?
During the checkout process online, you will have the opportunity to select the best delivery time slot for you.

How many days in advance do I need to place my order?
We offer same-day delivery in Manhttan if we get your online order by noon for delivery in the afternoon between 3 p.m. - 7 p.m. on the same day you place your order. Orders after noon will be available for delivery between 11 a.m. - 3 p.m. the following day. If you are placing a special order, Schatzie will need 2 to 3 days after you order a special item. All orders outside of Manhattan are next-day shipping through FedEx.

What about orders for the Holidays?
All your Holiday orders need to be placed at least 1 week before you want your order delivered. For Thanksgiving, the cut off for your orders is the preceding Saturday.

Can I order special cuts and types of meat and poultry you may not regularly carry?
Yes, we are happy to order anything you want – we just need up to 3 days, depending on what you want.


Where does Schatzie ship orders?
Schatzie offers next-day FedEx shipping outside Manhattan. In Manhattan, Schatzie hand-delivers his orders. To ensure the proper freshness of our products, our customers must be available to accept our deliveries. During the daytime, we deliver between 11 a.m. and 3:00 p.m. and in the afternoon/evening between 3:00 p.m. and 7:00 p.m. 

What days of the week do you deliver?
We deliver every day of the week.

What is your delivery schedule?
In Manhattan: Monday through Saturday Delivery
Daytime: between 11:00 a.m. and 3:00 p.m.
Afternoon/Evening: between 3:00 p.m. and 7:00 p.m.
Schatzie charges all his customers the same, by-hand delivery fee. It is just $10 no matter where you live in our Manhattan delivery area. 

How do you deliver orders in Manhattan?
Schatzie delivers his customer orders only one way – hand-delivered by special messenger. We do this to ensure the quality and freshness of all our products. In addition, we cryovac our fresh meat and poultry to maintain its quality and freshness while in transit.

What is the delivery fee and is it different depending on where I live in Manhattan?
Schatzie charges all his customers the same by-hand delivery fee. It is just $10 no matter where you live in our Manhattan delivery area. 

Am I responsible for spoiled meat if I am not home to get your delivery?
Yes. We expect our customers to be home to accept their orders once the delivery arrangements have been made and agreed to.

What kinds of beef do you carry?
We sell only USDA Prime Beef, the highest grade available anywhere.
Only 2% to 3% of all the beef raised and sold in the USA is certified PRIME by the USDA and guarantees the ultimate in tenderness, juiciness and flavor. Out of that, 2% to 3%, only 10% is truly exceptional. That extraordinary 10% of all the USDA Prime Beef is what Schatzie sells his customers exclusively. Do you sell Wagyu (Kobe) Beef?
Schatzie carries Wagyu (Kobe) Beef bred in the United States and sells the Wagyu Strip Steak. American Wagyu Beef is unquestionably the true connoisseur’s choice of meat. It is the most exquisite and prized beef and is without peer in this country. Wagyu is a breed of cattle predisposed to producing very densely-marbled beef. As a result of this very extensive fat content, Wagyu Beef is the richest, juiciest, and most tender beef of all breeds.

How do you age your beef?
We only dry age our beef which is the most natural way to intensify the flavor and tenderness. Schatzie dry ages the beef in his refrigerated meat locker of 30 days or so for dry aging.

Do you sell Organic Beef?
We sell Organic New York Strip Steak. We can special order Organic Beef in any other cuts.
Schatzie prefers non-Organic, corn-fed steer which he believes has vastly better flavor and juiciness. He would rather have you eat corn-fed beef less often and enjoy it more!! But if you insist, we’ll get it for you!

Where is your lamb raised?
All our lamb is carefully selected for us in Colorado which produces, in Schatzie’s opinion, some of the most outstanding lamb in the world. Colorado Lamb is not only tender, it has the best flavor and texture – it is that simple. Schatzie knows from the 60 years he has been a butcher, the quality of the meat begins with where the animals are raised, fed and cared for.

Many of our customers like our Free-Range Lamb, raised on a 100% vegetarian diet throughout their lives— fed grass only for six to eight months and then fed a mix of unprocessed grains. Their feed will never have any artificial supplements, stimulants, or animal by-products. Plan on a 2-day delivery.

Where does your veal come from?
The veal Schatzie sells comes from Wisconsin where the calves of dairy-bred cattle are raised on dairy farms. Our Milk-Fed Veal is lean, firm and velvety with a lovely creamy pink color and exquisite flavor. This prized pale color comes from their mother’s milk, supplemented with milk formula containing milk-based proteins, vitamins and minerals, similar to infant formula. Hence, the term “Milk Fed Veal.”

Do you sell Berkshire Pork?
Schatzie is happy to order any kind of pork you want, including Berkshire Pork which is streaked with marbling that makes it especially sweet, tender and juicy.

Is your poultry all natural?
Schatzie’s chickens are all-natural and free-range and come in fresh every day from a farm in Pennsylvania with whom Schatzie has worked for 40 years. That means all the chickens you buy from Schatzie will never have hormones, preservatives, artificial coloring or other additives. They are fed no animal products and are cared for in a better environment. You can really taste the difference between Schatzie’s farm-bred, all-natural, Free-Range Chicken and the commercial variety you get in a supermarket – Free-Range Chicken is vastly superior in every way.

Does Schatzie have his own Ground Beef Blends?
Schatzie has 4 kinds of exclusive Ground Beef Blends, each made up of several different cuts of meat combined to give you fantastic flavor. His personal favorite combination is called the Porterhouse Blend. His 3 other blends are: the Brisket Blend (#2); the Veal Blend (#3); and the Turkey Blend (#4).


What is your most popular cut of meat?
Without question, our most loved cut of beef is our USDA Prime Strip Steak, also known as a Shell Steak and Kansas City Strip. It is the most representative of our quality and Schatzie never hesitates to suggest it, especially if you are a first-time customer.

What if I can’t find a specific cut of meat or type of poultry on your Website?

MEAT 101

What do you consider the most essential kitchen tool for preparing meat?
No question, two essential thermometers – the oven thermometer and the meat thermometer. If you currently don’t own these, Schatzie urges you to buy one – it will make or break your success cooking meat and poultry. If your oven is off by 50°, you will certainly ruin what you are cooking. These 2 thermometers will be the best investment you will ever make.

How do I use a meat thermometer correctly?
For red meat, roasts, steaks or chops, insert the thermometer in the center of the thickest part of the meat, away from bone, fat, and gristle. For poultry, insert it in the inner thigh area near the breast of the bird, but not touching bone. For ground meat and ground poultry, place it in the thickest area of meat loaf and insert the thermometer sideways in thin items such as patties.

What temperature should the thermometer reach for various degrees of doneness in meat?
Although the USDA recommends meat’s internal temperature be at least 160°, Schatzie has found that the following temperatures give you the best results and thinks if the temperature exceeds 150° you have ruined the meat:

Rare: 125°
Medium Rare: 130° to 135°
Medium: 140°
Well Done: 145°

What temperature should the thermometer reach when poultry is properly cooked?
Schatzie recommends 150°to 155° as the optimum internal temperature for poultry and cautions that poultry always cooks more when you take it out of the oven.

What is the best way to cook a fresh turkey?
Schatzie cooks his 18 to 20 lb turkey for 3 ½ hours until the internal temperature reaches 155°. Because the legs take longer than the breast to cook, when Schatzie takes the turkey out of the oven, he cuts off the legs and puts them back in the oven for 20 minutes. Though some people think turkey should reach an internal temperature of 185°, Schatzie warns it will come out tough and dry. Schatzie also strongly recommends basting the turkey every 30 minutes. The old-fashion basting method is the best by far. He does not think you should tent your turkey.

How should I cook steak?
Broiling is the best method to cook your steak, along with grilling outdoors.

How should I cook a rib roast?
Oven roast your rib roast at 350°, calculating 15 minutes per pound. The internal temperature should be as follows:
Rare: 125°
Medium Rare: 130° to 135°
Medium: 140°
Well Done: 145°.

How should I prepare smoked turkey or smoked ham?
Your smoked turkey and smoked ham will already be cooked, so you just have to heat it. Estimate 350° for a 1 to 1 ½ lb ham.

How do I cut against the grain when cutting my steak?

How long can my meat and poultry stay unrefrigerated after it is delivered?
No more than 2 hours.

How long will my meat and poultry stay fresh if I refrigerate it?
3 days, but it will change color.

Do you recommend freezing meat and poultry?
Schatzie personally believes something gets lost when you freeze meat and poultry – it is not as fresh tasting, not as juicy, not as moist. Not terrible, but not the same.

Should I want to freeze my meat, how long will it last if I freeze it?
Estimate 2 years. Be sure to put the meat, still wrapped in it butcher paper, in a zip-lock style freezer bag. The sooner you freeze your food the better to maintain quality.

What is the best way to defrost my meat and poultry?
Always defrost in your refrigerator. Once out of the fridge, your meat and poultry must be cooked within a 2-hour window or it could be dangerous.
