Free-Range Cornish Hen

Cornish Hens are a special breed of chicken and, with the right kind of preparation, can be a very elegant dish to make for a dinner party or an intimate dinner for two. Schatzie likes to rub his Cornish Hens with some of his exclusive Richie’s Rub (which you can buy right here on our website) and then stuff it with a mixture of rice and tangerine sections. Roasting takes 1 ½ hours at 350°.
