The Veal Filet Roast is a lean cut, but is still quite tender. It is the Filet Mignon of veal. Schatzie likes to roast this cut, but it is also ideal for cutting into medallions, searing, pan roasting or grilling. You may want to add cream sauces or wild mushrooms to complement the delicate flavor of veal.
