Rib Pork Chop

The Rib Pork Chop is cut from the center of the loin and has a very nice meaty texture. It has a thin layer of fat around the outside and contains little connective tissue – this makes it good for fast, dry heat methods, such as grilling, roasting and pan broiling.

Schatzie is happy to order any kind of pork you want. Many of his customers like his Berkshire Pork, which is streaked with marbling that makes it especially sweet, tender and juicy.
