Schatzie the Butcher

The Schatzie Guarantee

WHAT IS USDA PRIME BEEF?

Schatzie the Butcher sells only USDA PRIME BEEF.
The Schatzie Seal guarantees you are getting the very finest beef there is to offer. Anywhere. And at the best prices in Manhattan.

USDA PRIME BEEF is the highest possible grade available. Only 2% to 3% of all the beef raised and sold in the USA is certified PRIME by the USDA and guarantees the ultimate in tenderness, juiciness and flavor.

And out of that 2% to 3%, only 10% is truly exceptional. That extraordinary 10% of all the USDA PRIME BEEF is what Schatzie sells his customers exclusively.

The grades of beef are based on two main criteria: the degree of marbling (fat or grain) and the maturity both of which add to the rich flavor. The more grain or marbling in the cut of meat, the softer and more flavorful. You only get this kind of coveted marbling from corn-fed cattle (never grass-fed cattle, which results in a leaner, tougher, less tasty piece of meat and is never graded USDA PRIME).

Remember this simple rule: Better feed (corn) produces more fat (marbling) which results in vastly better flavor. Fat equals flavor. It’s that simple. Schatzie would rather have his customers eat well-marbled USDA PRIME BEEF less often and enjoy it more!

The USDA PRIME BEEF Schatzie carefully handpicks comes from the Midwest, where cattle are corn-fed on family farms in the Corn Belt where the corn is grown in deep and fertile soils.

Once the USDA PRIME BEEF arrives at the shop, Schatzie dry ages the beef in his refrigerated meat locker for an extra 30 days or so to increase the tenderness of the meat and intensify the richness of the flavor.

Schatzie knows all USDA PRIME BEEF is not the same. Five decades of discernment, selecting only the most extraordinary beef, day in and day out, ensures Schatzie’s knowledgeable customers are getting the most sought-after, desirable meat available.

VEAL

The veal Schatzie sells comes from the calves of dairy-bred cattle, raised on dairy farms. The veal is lean, firm and velvety with a lovely creamy pink color and exquisite flavor. This prized pale color comes from their mother’s milk, supplemented with milk formula containing milk-based proteins, vitamins and minerals, similar to infant formula.

LAMB

All our lamb is carefully selected for us in Colorado which, in Schatzie’s opinion, produces some of the most outstanding lamb in the world. Colorado Lamb is not only tender, it has the best flavor and texture – it is that simple. Schatzie knows from the 50 years he has been a butcher, the quality of the meat begins with where the animals are raised, fed and cared for. Many of our customers like our Free-Range Lamb, raised on a 100% vegetarian diet throughout their lives— fed grass only for six to eight months and then a mix of unprocessed grains. Their feed will never have any artificial supplements, stimulants, or animal by-products.

CHICKEN

All of Schatzie’s chickens are free-range and come in fresh every day from a farm in Pennsylvania with whom Schatzie has worked for 40 years. That means all the chickens you buy from Schatzie will never have hormones, preservatives, artificial coloring or other additives. They are fed no animal products and are cared for in a better environment. You can really taste the difference between Schatzie’s all-natural, farm-bred, Free-Range Chicken and the commercial variety you get in a supermarket – Free-Range Chicken is vastly superior in every way. If you prefer Organic Chicken, Schatzie can always get it for you. Ask Schatzie and he will tell you there is virtually no difference in taste and quality between Organic and Free-Range Chicken.
